An old favourite in the days when fortified wines ruled the roost in New Zealand’s wine industry. Today this wine has largely become relegated to restaurant use and it is made in a hybrid style of fortified with sweetness and raisoned prune flavours to emulate both Madeira and a tawny port.
It’s sweet and straightforward and provides good value for cooking dishes, both savoury and sweet because it caramelises well.
