This Daiginjo has been milled to 28%, which is one of the smallest and most delicate rice used in all Sake production. It takes 3 days and nights to gently polish the rice grains to reach the incredibly small (2mm) pearly beads.
This is one of the most pampered sakes in Japan and the results are incredible. Aromas and flavors of cantaloupe and honey w/ balancing acidity, pepper, umami, and layers of complex flavors.
